Pumpkin cookies to kick off fall.
Pumpkin chocolate cookies, ohh, two of the best fall flavors combined. I needed a dessert to make one night and pumpkin sounded like a good flavor idea, so this is what I got. It is a very moist cookie made with almond flour and egg-free. Sweet, spicy, and chocolatey this cookie is a delightful fall dessert.
Ingredients:
1 1/3 cup almond flour
1/2 cup xylitol or sugar
1/4 tsp. salt
1/4 tsp. baking soda
1/2 cup milk
1 cup pumpkin
1/2 tsp. vanilla
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1/2 tsp. ginger
Directions:
Preheat the oven to 350 degrees. In a large bowl mix together all of the dry ingredients. Then add the wet ingredients and mix until smooth. Using two teaspoons scoop the cookie dough onto cookie sheets in golf ball size balls. Place the cookies in the oven and cook until firm, about twenty minutes. While the cookies are baking melt some semi sweet chocolate chips with a little milk and set aside. Once the cookies are done spread 1 tsp. of the melted chocolate on each one. Now your yummy fall cookies are ready to enjoy.
