Peanut Butter Patties

Creamy peanut butter in small sweet patties, what more could you want in a dessert?




 

Peanut butter probably one of the greatest foods along with chocolate. I am still messing around with sugar free and keto desserts and snacks. That is one of the hardest things about a diet you want a dessert but you don't want it taste like a diet dessert. My family loves peanut butter and could eat quite a bit of regular peanut butter fudge. So while we are on a sugar free diet I had to come up with some sort of alternative. These little patties definitely do the trick and even children like them. Not only that they can be made in minutes and keep in the fridge if made in advanced. And because they are so small they look fancier and like they took more time than they did. Great for a fast party snack as well.


Ingredients:

1/2 cup Natural sugar free peanut butter

3/4 cup Peanut butter powder

3/4 cup Stevia powder

8 ounces reduced fat Cream cheese

3 Tbsp. Heavy cream


Directions:

Put all of the ingredients in a mixing bowl and mix on medium speed or until everything is well blended. Get some of the mix and make it into a small ball. It should be about the size of a jumbo tootsie pop. Then flatten the ball so that you have a small patty. Set it on a plate and repeat with the rest of the mixture. You should get about 22 patties depending on how big you make them. You can make them larger or smaller if you want. I find that this size is easier to handle and has a dainty look.


Put any left over patties into the fridge in an air tight container and eat within a few days. These are great for a quick late night dessert or a nutty snack throughout the day.


Tips:

If you cannot get the cream cheese and peanut butter mixed well enough in the mixer. Put on a glove and stir the mixture with your hand. It sounds weird but it sometimes is the only way to get it mixed enough.

You can also melt some chocolate and dip the top of the patty in it or better yet fully submerge the patty in the melted chocolate and pull it out with a spoon. Then place it in the fridge until the chocolate hardens. This will take a little longer but worth it.
