Lemon Chicken and Artichokes with Zoodles

A refreshing summer dinner.

One of the most refreshing flavors of summer is lemon. And what a better way to incorpirate lemon into your dinner than with this lemon chicken and artichoke treat. You get just enough lemon to make it refreshing and not enough to drowned the other great flavors. The best part about this recipe is it is keto and gluten free. Great for any time of the year and definitely on a hot summer day when you want something light and yummy!



Chicken Ingredients:

4 chicken breasts

1 14 oz. Can of artichokes

2 Tbsp. Olive oil

1 tsp. Parsley

1 tsp. Garlic salt


2 large zucchini for the zoodles.


Sauce:

¼ cup and 2 Tbsp. Lemon juice

4 tsp. Minced garlic

½ tsp. Salt

¼ tsp. Pepper

2 Tbsp. Olive oil

½ cup coconut milk

1 cup water

½ cup Parmesan cheese

2 tsp. Arrowroot flour


Directions:


Chicken Directions:

In a large skillet cook the chicken with the olive oil, parsley, and garlic salt. Cook until the chicken is fully cooked and colored nicely, then drain off the excess juice. Add the artichokes to the chicken and keep on low heat until fully heated.

Sauce Directions:

In a pan place all of the sauce ingredients and put over low heat. Cook while stirring constantly until the sauce is thick and hot. I f the sauce is thicker than you like simply add coconut milk 1 Tbsp. at a time until it reaches the desired consistency. Once cooked keep on simmer until ready to use.

Zoodles:

In a skillet pour 2 Tbsp. Of olive oil. Using a veggie noodle maker cut the zucchini into noodles. You can also just cut the zucchini into circles and cut each circle in half and cook it that way if you do not have a slicer. Put the zucchini into the pan and saute it until just soft.

To plate it elegantly place some of your zoodles on a plate and lay a piece of chicken on top of them. Pour a generous amount of the sauce over all of it and garnish with Parmesan cheese and parsley. Tips:

You can also substitute the zoodles for regular noodles and it tastes great.

Make sure that you stir the lemon sauce or it will stick to the pan.
