A quick flavor filled dish for any meal.
The Frittata sounds like something that you would order at a nice restaurant. Though it sounds fancy this is simple to make. And it is fast for those early morning breakfasts with a large group, or a late night dinner when you want something light. My family was having a hard time coming up with a dinner idea one night and we finally decided on a frittata. I was following a recipe in a cookbook, but I did not have some of the things right there, and decided that I would switch things up a bit. So I hope that you enjoy this tasty Italian frittata recipe. It is especially good if you serve it with some sauteed zucchini as a side, and some orange juice.
Italian Frittata Ingredients:
2 Tbsp. butter
8 eggs
1 tsp. Italian seasoning
1/2 tsp. minced garlic
1/4 tsp. pepper
1/2 tsp. salt
2 Tbsp. dried diced onion
1/2 cup bacon bits
1/2 cup shredded Italian cheese
Directions:
In a 10 inch cast iron skillet melt the butter and be sure to brush it up the sides of the skillet as well as the bottom. In a large mixing bowl combine all of the seasonings, cheese, and bacon bits. Stir them until well combined. In a small bowl beat together all of the eggs so that the white and yellow are totally blended. Now add the eggs to the seasoning mixture and stir until the seasonings are spread through all of the eggs. Pour the egg mix into the cast iron skillet and cover with a lid. Turn the burner onto medium low heat and cook for 15 minutes or until the edges of the egg start to turn light brown and the top of the egg is bouncy when tapped with a fork. Once the frittata is cooked cut it like a pie into 8 or 10 slices depending on how large of a slice you want. And there you have it, a exotic quick and easy egg dish ready for any meal.
Tips:
Using a glass lid on the skillet makes it easier to see the progress of the egg without having to lift the lid as often. This will help keep all of the warm air in there so that the top of the egg will cook faster.
