A tasty new recipe to mix up the meal options.
Everybody gets tired of having the same meals over and over for dinner. Sometimes you need to switch it up and be creative. I have made pad thai before and it is really good. One evening however I needed a dinner idea and I did not have all of the ingredients for pad thai. So I was going to make something close to it when I realized that I did not have soy sauce. So of course most of us would think that you can't make an asian tasting dish without soy sauce. But this recipe is special, not only is it made without soy sauce but it is sugar free. I hope you try and enjoy the recipe below.
Ingredients:
6 chicken breasts
2 Tbsp. olive oil
1 pound of rice noodles
1 tsp. cilantro
Sauce:
1 1/2 cups water
1/3 and 2 1/2 Tbsp. apple cider vinegar
3/4 tsp. red pepper flakes
1 1/2 tsp. sriracha sauce
4 Tbsp. xylitol
4 Tbsp. stevia
2 Tbsp. arrowroot flour
Directions:
In a large skillet put the olive oil and chicken and cook over medium heat until it is fully cooked. In a large pot bring water to a boil and cook the rice noodles. They cook fast so keep an eye on them. Once the noodles are just cooked strain them and set aside. After the chicken is fully cooked cut it into bite sized pieces and drain out any juices from the skillet. Sprinkle on the cilantro and turn the heat to simmer. In a medium pot combine all of your sauce ingredients and whisk over medium heat until it begins to thicken. Once it is a nice thickness go ahead and pour it on the chicken. Stir it until the chicken is coated in the sauce, then add the rice noodles to the mix. Stir all until it is covered in sauce. Now it is ready to serve. Just get yourself some chopsticks and enjoy.
Tips:
You can substitute the sweeteners for regular sugar. Also if you are not a cilantro fan it can be substituted for parsley.
