A good pie for any occasion.
We make pie fairly often here. This one or one very similar to it was made a lot at one point. I was trying to come up with a unusual pie flavor and decorate it just right. Apple blueberry was not a pie that I had eaten often so I decided that would be the pie I would use and try to made it look fancy. I made the pie multiple times trying to get the top decorated in the way that I wanted. I ended up making the pie a lot in a very short period of time. it may have been the first time that my family got tired of pie. Which rarely happens. So a tip for all pie bakers. If you are trying to get a pie to look just beautiful and you keep making pie to practice do not keep using the same pie filling. Switch it up often or people will get sick of pie. Though that rarely happens!
Ingredients:
4 cups of apples
½ cup sugar
1 ¾ tsp. Cinnamon
1 Tbsp. Tapioca
¼ tsp allspice
¼ tsp. Nutmeg
2 cups blueberries fresh or thawed
Directions:
Preheat the oven to 425 degrees F.
Cut and core the apples and slice them thinly. Next add the blueberries and spices. Mix it together so that all the fruit gets coated in the spicy good stuff.
Now pour the filling into an unbaked pie crust and place a top crust on the pie. Bake for 15 minutes.
Then lower it to 350 degrees F for 40-50 minutes. Bake until the crust is golden brown.
Tips:
Try finding a brand of frozen blueberries that are consistently good. Then use them in your pie. It is awful to work hard on a pie and then have the fruit taste bad. Make sure that you thaw the blueberries if you use frozen.
Now you have a fresh sweet Apple Berry pie just waiting for a scoop of ice cream. I hope you enjoy.
